Antivirus program that will email admin upon infection?
I know in the past I have used NOD32 at a prior workplace and when an infection occurred an email would be sent to the network admin.
Does this sound right? I want to implement something where the software resides on our servers and client software would then be installed on all machines so that the updates are controlled and forced in-house and we can see who and what gets infected.

Any of the "big name" antivirus MFGs will have an enterprise solution. It's standard for all of them to give you the type of reporting you are wanting. Some common solutions are Worry Free Business Security from Trend Micro, Endpoint Protection from Symantec, and McAfee has their own security sweet as well. Trend and Symantec seem to be the most popular by far.
