Question Symantec client security 2.0 install on servers and clients

Hi I have a network system of several servers and about 20 client pc's that I want to upgrade my virus protection for. When uninstalling a corporate edition of norton on clients from my antivirus server will it make the clients restart? I don't want any of them to restart as they are performing critical operations. I take it that the anti virus server will have to restart.
I also need a bit of help of making an order in which to install my new version onto the main server and then onto the clients? I know its a big question but does anyone have any ideas?
