How do I assign SSL to Virtual Hosted Sites? And where can I find documentation on this subject?

You probably can't. Each vhost account should also have an alternative URL under your main domain like http://www.yourdomain.com/vhost_account/
That is, your vhost accounts need to share the common URL https://www.yourdomain.com/vhost_account/ , not https://www.vhostdomain.com/

Is there a difference for IP based Virtual Hosting or Named Based Virtual Hosting? Or it applies to both.

are you talkin about the vhost module of apache? i believe (only guessin) that you may have SSL with each domain name if you are running this mod. i have not tried however.
