Is it possible to create a sub domain using mod_rewrite? If so, please include an example.

Not with mod_rewrite alone. You need to run DNS. http://subdomain.foobar.com/ just doesn't get resolved.

mod_vhost_alias works better. If you set up DNS with wildcards you can set up subdomains just be creating the directories.
