Sendmail is the most popular and included in most Linux distributions. Developement on this is active and probably the easiest to find documentation for.
Qmail has it's ups and downs. I found it very easy to set up but developement on this is very slow with what seems like hundreds of patches. It has been several years since a new version was put out. It claims to the most secure server available and so far as far as I know, noone has proved them wrong.
Postfix is what I am currently working on, yet I don't know a whole lot about it as of yet.
I used to use qmail, but am more fond of software with active development so I am currently switching over to postfix. Sendmail has too many past security problems for me to be comfortable with it.
I am sure there are many more, but these are the most popular ones that I know of.
