"Minimum Requirements" depend on what you want to do really. For example: if you want to run X on it, you'll need more RAM and disk space than if you choose to go with the command line interface.

I have an AMD 850, 128 MB and 20 GB hard drive. I want to use a GUI. Is FreeBSD a good choice of the BSDs.

That hardware is sufficient for FreeBSD. If anything, I would upgrade the RAM to improve performance for the future.
