I undertstand how they work, but what are some real-world examples of Ring and Star topologies?

The State of Oregon uses a Token Ring network. If you understand the difference between star and ring under load you will understand why they are token ring.

Hynix [formerly Hyundai] in Eugene uses a FDDI ring in the fab with star nodes off the ring.
