loosing data while exporting from access to excel

Hi all,
I am storing a cookie value in access database. The characters in access are way beyond 255 in no and thus I have used "Memo" type of data. When I try to export this data to excel or anything like print out first 255 (I guess) comes to the spreadsheet and rest of them gets lost. Is there a way I can not loose the data. I can break my cookie into several pieces and store it separately but won’t be efficient for my data analysis purpose.
Also is there a way I can export desired fields from 2-3 tables into one excel file and not all the attributes?
