I believe cvs is pretty much standard fare on servers nowadays. It's command line driven though, if you're looking for a traditional thing more like Microsoft Source Safe (which is also excellent but expensive), do a search for WinCVS, which is a GUI tool for using cvs, I think.

Also check out Subversion, which is attempting to do some things better than CVS.

Yeah, a sysadmin buddy of mine has been trying to recommend subversion to me, but I just haven't gotten around to using it yet. CVS/WinCVS is a decent combo, however I prefer Sourcesafe (when someone else is footing the bill
