adding another website to IIS

I have been developing a website on my local machine, and just finished it. Now I want to open up another web project to start working on another web site. So I go to IIS and then To the WebSites folder. However when I first started developing the first website, there was a Default website folder there. So I right clicked it and set it to work with the website I was developing, working off the localhost.

Since I am finished with this website, I want to start another one. However, when I go to the IIS Websites Folder, Default Website is no longer there, and just the website I created is.

How do I go about adding a new website to the Websites folder? Do I have to get rid of the current web site that is already there? Or just alter it to the new website I want to work on.

What OS are you using? Windows 2000/XP Pro can only have the one website. You need Windows 2000/2003 server to have more than one website.
