Host Header??

I have an IIS server that is also our Exchange server. I want to setup a second website on this server for my new domain, www.schubertnetworks.com. I believe that I need to use the "Host Header" field to configure IIS to route requests for schubertnetworks.com to the index.htm page for my site. Should I use "www.schubertnetworks.com" or "schubertnetworks.com" as the host header? Is ther any other tricks I need to know about running more than one website on an IIS 6 server? Thanks!!
