Just got a dedicated server w/ IIS - Now What?

Thanks for taking the time to read my post. I just bought a dedicated server (windows 2003 web edition) and intend to host websites on it. I have been using IIS on my localhost but only on a very limited basis. Now I want to start playing with the "big boys" and hosting about 20 of my clients websites. First concern for me is security and updates for my server. Does turning on windows update take care of these issues? Secondly, I would like to learn how to set up these websites to include designating a nameserver for my system. Is there a good tutorial out there for this purpose someone can direct me to? Thanks so much.
