How can apply security on windows mobile

Hello,
Our company bought an application which runs on hand held devices with windows mobile 5.0 operating system. Our visitors visit our customers every day and insert visit results into that application in hand held. We don't want that visitors could be able to change hand held configurations such as its date and time. I think that I should able to define users and assign permission to him on windows mobile, like windows XP or Windows 2003. But how can I define user on windows mobile? Or is there any other way to achieve to this purpose?
Best regards…

After a day I finally found the solution. I should use "Spb Kiosk Engine" tool which lock device like a real kiosk that user could only interact with related business application.
