Which language for...

Looking to create a GUI that will open a set of standard pdf files and extract a table from each and then arrange the data in excel.

No previous programming experience... where do I start?

With no previous programming experience, I think I'd be looking at one of the scripting languages. Autoit, for example, allows you to do seemingly odd things fairly easily.
If this is a one shot deal, I'd do it by hand ....

well C++ and C fit that the best. C was designed for system programming like Operating Systems and device drivers. C++ is a super set of C and is pretty much C with Object Oriented Programming.
