How can I take out what's inside of the crop box. As opposed to whats outside of it.

Invert your selection.

I'd give you a click-by-click description but I don't have PS on this machine.

Edit I just saw this in another post. To invert a selection: Ctrl+Shift+I

use the rect marquee tool to selct then press delete..
