photoshop layering

There are a few questions about the layering that seems to have me stumped. However, i have not experience enough in the photoshop area outside of cropping and editing pics. basic layering is logical in it's process however I can't quite figure out the basic understanding of HOW it is working.
Right now I have a label that needs to be transferred to a webpage however, it has been requested that the colors be changed. (I would get a book but I am in the middle of eastern europe without a chance to get an English book for photoshop!!!)
The basics are these. I duplicate the label which is very simple- only two layers... the backdrop white and the image maroon. The back drop only needs to be black. However, when I click onto the "eye" of the backdrop image it goes blank like it should. I try to make another backdrop layer and get nothing exept a selection of pastel colors... What's up with that. I try to change the colors or get the color black in there. I simply don't know how to get it to black.
I know this is so basic. but really... uhhhh
Any suggestions? Please feel free to send a line to me.

Hey I'm also a PS newbie (6 months or so exp.) but why not just add a new layer with bg colour set to black and then hide the original white backdrop?

The pastel colours you are seeing are just for layer organisation (you can colour code layers and layer groups for ease of use).

or

If you select Layer->New Fill Layer the colour list is for the layers dialog only click OK and you will see the Colour Picker Dialog - just select Black (000000) and you will have a new black backdrop layer - delete any unwanted layers before you 'Save for Web'
