I work in rgb until I'm finished with my project. Then I convert it to CMYK and check/fix the differences.
The computer has to work harder to constantly convert your RGB to CMYK on your screen, so it's best to do it later on.

You can see how your image will look as CMYK at any time without changing the mode by pushing Cmd- or Ctrl-Y. This previews your image in your proof colors, which is CMYK by default.
