Is there a shortcut key for........
Does any one know of a shortcut key in PS7 to flip the canvas or active layer horizontal?
Also is there a shortcut key to flatten an image?

I looked in Photoshop CS and this shortcut is unbound so I doubt it is in PS 7

Cmd-Shift-E (Mac) or Ctrl-Shift-E (Windows) is the closest you're going to get, this merges all visible layers.
If you select the Move tool and check "Show bounding box", you can manipulate an image without having to navigate menus, and you can right- or control-click to bring up a contextual menu of editing manipulations, including flipping, for a layer.

If this is something you do frequently, you could create an action and bind it to any of the f keys. If you don't know how to do this, let me know and I can help you.
