I am wanting to setup a site that will use Mysql and Php.. My main question is, what database software products can I use to make the databases. Ie.. MS Access .. Any light that someone can shed I will be gratefull.

You can use MySQL itself to create your databases. There is a good tutorial here (Website database basics with PHP and MySQL) and in the manual for MySQL at www.mysql.com (search manual for tutorial).
