Depending on what your looking for, I would say OMNIhttpD is the easiest to setup ...
IIS I would use if your wanting to setup an eCommerce server.
Apache, even on NT I think is your stablest bet.
WindowsNT and MySQL work fine together .. my MySQL server currently has been up for 189 days. On a WinNT box.

my favorite is just apache, because of low system usage
Apache is a complete new type of webserver, that uses child processes, and starts these independant of the main server
And, PHP has some specific Apache commands and options, so to take full advantage of php, i should recommend Apache
don't blame me, im blond

i happen to know another webserver, which i think deserves consideration since it's as easy as omnihttpd.. try xitami webserver. it's small and pretty powerful.. check it out at www.xitami.com
though, from all webservers known,.. i would definately choose.. apache..
