What functions can return EINTR?

And usually the question is "what errors could this function that I'm using throw?"
And out of curiosity, did you mean "Baal" instead of "ball"?

Normally no standard or system specific function would return this value, rather when a function fails errno may be set to this value.
I cannot see any advantage in enumerating all the functions that might result in errno = EINTR, a more useful approach would be to read the documentation for any function you choose to use and if it throws EINTR you might want to handle it.
However if you really must, the method I would use to generate such a list is to use a Google site search of a site that documents the POSIX API; for example EINTR SYNOPSIS site:opengroup.org

I'm making fun of the name baal (he was a gould on stargate.)
I was just confused why some functions returned EINTR and some did not (and a couple of other points.)

That is not what you asked; rather you asked for a list of functions. I am not sure haow that would help. The answer to the question you should have asked perhaps is here.
