SEO and IIS Host Headers

I've just taken on a new client. They have a complex database driven site and "moved" to a new URL about 6 months ago. They "moved" the site by adding additional host headers to the current site. Most of their SEO results still points to the Old URL.

From my understanding host headers and 301 redirects are very different. And what I actually should do (to get Google and Yahoo) to find the new URL, is set up a different "site" in IIS and do a redirect within the IIS Management Console.

Can someone please confirm?

Use 301 redirect to redirect old pages to new. A 301 permanent is the only way to go. 302 will not work.
