CA properties with OpenSSL

I'm just starting with SSL certificates, and I just couldn't find the answer on google...

Is there a way to set/change a SSL certificate "default" properties in a way that these properties become part of the certificate itself (maybe before signing)? If so, how is it done?

Basically, I want to make a CA root certificate, and have its Enhanced Key Usage Property set to some default values.
