how can a linux user be sure that his emails havent been read by root or a superuser ?
is there any script/program that warns if the email is accessed by them (root, su, etc)

I am not aware of something like that, but you can always encrypt your mail... That way you won't have to worry about root (or any one else) reading your mail.
