Image processing

Hi people,

Can anyone here explain how to do background subtraction?
I understand that it is roughly: foreground=image-background

However, how to I use the mean and variance of the pixels to do this computation?

Any help is gradly appreciated.

there's an exact sample of what you want in matlab demos.
the first sample as I remember in image processing toolbox of matlab
