In my opinion, things to look out for are:
a) Disk Space and RAM
b) Technical Support
c) Uptime and bandwidth
d) Over all service
e) Cost of the plans offered
f) Payment option

The old adage, "you get what you pay for", seems most appropriate in their case, and I would rather pay that few extra dollars for their reliability and competence than to find my sites down for long periods at a stretch, costing me more money than the few bucks I can save in hosting fees.

Look at your current usage and double it at least, triple is even better because coming half way through the month and running out of bandwidth is probable the worst thing you can do for your website.

Support, is only if needed, such as a problem with the server being off line, its nice to be able to contact, and find out how long it will be off for.
